Waking up at Wind Mountain Ranch on event day was a little emotional, to be honest. We called this corner of the country home for a long time, and it still carries that sweet weight. The sweeping view of the Columbia Gorge from the porch of one of the guest cabins, even swathed in a thin sheen of wildfire smoke, is one of the most beautiful landscapes one could ever hope to see. On this ranch, though, the views continue as they wrap around, transforming into rugged mountain ridges as Wind Mountain stands sentry over the vast landscape. It’s nothing short of spectacular, even without the sentimental attachment we carry.

We set the Supper table to frame those views from every angle, and dressed it with greenery-inspired Pomegranate napkins and show-stopping florals from our good friends at Wildflower Portland. After a delightful welcome social to drink in the surroundings (and some delicious Patrón cocktails), we sat down for a wild feast from Chef Cameron Dunlap from Portland’s Morchella, showcasing beautiful Sena Sea Copper River Salmon cooked over open fire on Big Green Eggs and many foraged flavors from the nearby landscape — truly, chef was foraging some final ingredients the morning of the Supper. Each course was paired with a cocktail thoughtfully mirroring his creative flavors, from the Alderwood smoked salt to fresh summer berries. We ended the evening with a toast to this incredible place and the opportunity to slow down and enjoy it together, utilizing each of our senses.

While we gazed at the 360 degree views from the ranch’s front lawn, we enjoyed refreshing Patrón cocktails, a Patrón Silver Shandy and fresh melon Agua de Sandia, to set the tone for the easy-breezy evening together.

A MENU BY CAMERON DUNLAP

Chef Cameron was still finalizing his menu up to the moment he arrived at Wind Mountain Ranch, because he was busy foraging the best of the season to share at the table. He even found a few of the ingredients while hiking with his son on Wind Mountain, which overlooked our table. The meal truly brought the abundance of the surrounding land to the plate.

COCKTAIL PAIRINGS

Each course of the meal was accompanied by a hand-crafted cocktail featuring Patrón agave spirits and local ingredients to compliment chef Cameron’s creative flavors.

NIGHTCAP

We ended our evening with a special dessert cocktail featuring Treehouse Drinking Chocolate and Patrón Gran Smoky. It was a decadent end to the evening with a dessert of blackberry and pink peppercorn. Together, they became the culinary equivalent of spending a summer evening around the campfire.

 

SECRET LOCATION: WIND MOUNTAIN RANCH

Jacob and Danielle used to live just down the street from Wind Mountain Ranch in Stevenson, Washington, so this Supper felt like a bit of a homecoming. Jacob spent the morning tracing some of his favorite hiking trails on the horizon while folding napkins, and trading secret foraging spots with Chef Cameron while unloading his mise en place. The views here can’t be beat, from sweeping panoramic of the Columbia River Gorge on one side to the stately silhouette of Wind Mountain on the other.
